Tabalí Pedregoso Gran Reserva Cabernet Sauvignon
Intense ruby colour. The bouquet offers generous ripe cassis and blackberries, juicy black cherries, violets, with a hint of smoke and toast. Well-rounded in the mouth with silky tannins and a conspicuous noble body and structure. Flavours of dark berry fruit, floral violets and spicy pepper dominate the palate. The wine achieves a good balance of fresh acidity and abundant fruit.
100% Cabernet Sauvignon sourced from Dom Vineyard in Maipo Valley. The vineyard is located in the Metropolitan Region, in a transversal mountain chain belonging to the Coastal Range. It is planted 320 metres above sea level on south facing slopes, with a cool climate and few hours of sunshine. As a result, the grapes ripen more slowly, producing fresher and more elegant wines. The colluvial soil is broken up by very stony layers that have been formed because fractured rocks from the cliffs fell to the base and rest there, forming a soil with very angular stones. This soil is perfect for planting Cabernet Sauvignon because of its low fertility, which naturally controls the growth and production of grapes, resulting in very high quality.
The grapes were hand-harvested into 20kg-bins when this variety reached optimum phenolic ripeness. The clusters were carefully selected, then destemmed and selected one last time. Fermentation took place in small stainless steel tanks at controlled temperatures. Maceration occurred after the alcoholic fermentation. Finally, the wine aged in French oak barrels for ten months.
