Pouilly-Fumé is situated 200km south of Paris, on the east bank of the Loire valley. Pascal Jolivet owns a total of 8 hectares in the villages of Les Loges, St Andelain and Tracy. The soils in Les Loges (50% of blend) are chalky-limestone, giving the resultant wine length and body, while in flint and clay dominate St Andelain (30% of blend) and Tracy (20% of blend).
Each terroir is vinified separately. The grapes are manually harvested and sorted, then gently pressed. Fermentation with natural yeasts in large stainless steel tanks at 16°C for 33 days. Aged in stainless steel for two months before blending and bottling.
