Kanonkop Estate Paul Sauer
This fellow is a legend. A regal wine recognised as one of the best South Africa has to offer. Named after Kanonkop’s patriarch, this wine is a Bordeaux-style blend of 62% Cabernet Sauvignon, 13% Merlot and 25% Cabernet Franc. The 2015 Paul Sauer became South Africa’s most sought-after red when Tim Atkin MW awarded it his first 100/100 score in the New World. Although concentrated and powerful, this vintage is softer and juicier than the structured 2015.
A cigar box has never smelled so good! Aromas of cassis, sweet spiced plum and Cape wildflower are complexly layered with firm notes of tobacco, oak and cedar wood. Think of an oak cigar box with a plushy red and black fruit core. The full-bodied palate is balanced by seamless tannins and elegant acidity, with savoury notes on the finish.
The grapes are picked by hand and placed into 18kg lug-boxes. At the cellar, de-stalked bunches go through three stages of sorting: sorting machine, vibrating table and computer-controlled optical sorter. Maceration occurs in open top concrete fermenters for 5 days on skins at 29°C. Punched down manually every 2 hours for optimum yet delicate tannin and colour extraction. Matured for 24 months in 100% new 225L French Nevers oak barrels to accentuate the depth of flavour, structure and complexity offered by these three grape varieties.
If stored correctly, this wine will mature gracefully for 20–25 years from the vintage.
