Fetzer Sundial Chardonnay 2017

Attractive golden straw colour. Fetzer Sundial Chardonnay is bright and balanced, with layers of plushy fruit and great acidity. The bouquet opens with baked apple and pear, tropical fruits, citrus blossom and crème brûlée. Secondary notes of hazelnuts, vanilla, cinnamon and cloves reveal themselves at the end of a long sniff. The crisp palate has persistent flavours of pear, lingering peach, fresh citrus and an array of tropical fruit layers – pineapple, mango, banana, melon. The wonderfully long lingering finish is creamy and delicious.

This Chardonnay was harvested at optimal ripeness in late September. It was fermented in stainless steel tanks, with a mix of new French and American oak at different toast levels. The oak portion also completed malolactic fermentation, making the blend extra rich, a little buttery and the perfect amount of toast.

Asian Chicken Salad Recipe


  • 6 cups of mixed lettuce
  • 1/2 package of dried rice vermicelli or dried noodles
  • 1 bunch of green onions, sliced
  • 6 chicken breasts, cooked & sliced very thinly
  • 1 red bell pepper, sliced thinly
  • 1/2 cup chopped roasted peanuts
  • For the dressing:
  • 2/3 cups rice vinegar
  • 1/3 cup soy sauce
  • 1-1/2 tsp ground ginger
  • 1-1/2 tsp dry ground mustard
  • 1 tsp coarse ground black pepper
  • 1/8 cup Mirin
  • 1/2 cup peanut oil
  • 1/8 cup sesame oil
  • 1/8 cup toasted sesame seeds


Fry the rice noodles in 350 degree oil until they puff up. Using a slotted spoon, place the crisp noodles on paper towel. (This happens fast if the oil is at the right temperature). Wash the greens and spin them dry. Toss the salad greens with the rest of the ingredients, toss with the dressing and serve at once. 

For the dressing: Combine vinegar, soy sauce, sugar, ginger, mirin, mustard and pepper. Whisk until sugar dissolves. Add peanut oil and sesame oil, whisk to combine. Add toasted sesame seeds and blend.

The 2017 Fetzer Sundial Chardonnay is as good as it has always been. TASTING NOTES: This wine is smooth.
