Aviation Gin

We know its a pretty common gin, if it wasn’t for Ryan Reynolds, this probably wouldn’t be on our site 😉

I mean, just look at that…

Like the world’s finest gins, Aviation is distilled using a proprietary maceration recipe that produces a pure medley of botanical flavour.

The gin takes a Dutch style rye spirit base combined with cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are steeped in a pure, neutral grain spirit for 18 hours in macerating tanks. The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate and the vapours go into the condenser, which cools the vapours to form the gin distillate. In a meticulously monitored process, the first fluid leaving the still, the “heads”, is removed. Collecting the “heart of the spirit” throughout the run, the distillers then determine the end of the cycle and make the final cut, “the tails”. This process takes approximately 7 hours and at this point, the “heart cut” is 142 proof. The “heart cut” is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labelling.

Aviation Gin is referred to as an “American dry gin”, which means that its taste profile doesn’t have as dominant a juniper flavour as most other gins. The nose contains crisp notes of juniper alongside delicate floral sweetness, a touch of citrus peel, green vegetal notes, and a pinch of spice. Wonderful spicy notes on the palate with strong cardamom and a scattering of cinnamon, which linger on the finish. This smooth flight lands with a return to fresh citrus peel.
